Bright, tangy, and bursting with juicy blueberries, this gluten-free lemon blueberry bread is a sunny slice of comfort. Whether you’re avoiding gluten by necessity or choice, this recipe delivers all the soft, tender texture of classic quick bread no wheat required. It’s perfect for breakfast, a midday snack, or even a light dessert.
With just the right balance of sweet and tart, this loaf pairs beautifully with a cup of tea or coffee. Plus, it’s easy to make, uses simple pantry ingredients, and can be adapted for dairy-free or lower-sugar diets if needed.

Ingredients
1 3/4 cup Gluten-Free Baking Flour
1/2 cup Coconut Oil
2/3 cup XyloSweet
1 tsp Baking Powder
1/2 tsp Salt
3 Eggs
2 tbsp Lemon Zest
1 tbsp Vanilla Extract
1/4 cup Lemon Juice (juice of 2 lemons)
1/2 cup Almond Milk
1 pkg Fresh Blueberries
Non-Stick Pan Spray
Method
Pre heat the oven to 350 degrees. In a medium bowl mix the flour, baking powder and salt. In a large mixing bowl combine the lemon zest, lemon juice, XyloSweet, coconut oil and whisk together until creamy. Add the eggs one at a time until blend, light yellow and creamy. Combine the dry ingredients into the creamy and mix well.
Fold in the blueberries. Spray the loaf pans with the non-stick coconut pan spray. You can use a large loaf pan or 3 mini loaf pans. I prefer to use the mini loaf pans. Add the mixture to fill the pans half way. Place the pans on a baking sheet and bake for 45-55 minutes. Test the bread by inserting a toothpick in the center and if the center comes out clean the bread is done.
